Arugula Pizza!

INGREDIENTS:

  1. 1 roll refrigerated pizza dough (or prebaked pizza crust)
  2. ¾ cup pizza sauce
  3. 8 ounces fresh mozzarella, shredded or torn into pieces
  4. 2 cups fresh arugula
  5. 1 cup cherry tomatoes, halved
  6. Balsamic glaze, for drizzling
  7. Extra-virgin olive oil, for brushing
  8. Freshly grated Parmesan or Romano cheese

INSTRUCTIONS:

  1. Prepare the oven and dough. Preheat your oven to 425°F. Roll out the pizza dough into a 12-inch circle on a pizza pan or baking sheet.
  2. Assemble the pizza. Top the dough with the pizza sauce and then with the mozzarella cheese. If desired, drizzle a little olive oil over the base before adding the sauce.
  3. Bake. Place the pizza in the preheated oven and bake for 11–14 minutes, or until the cheese is bubbly and golden brown.
  4. Add final toppings. Remove the pizza from the oven and top it with the cherry tomatoes and arugula. Add a drizzle of balsamic glaze over the top.
  5. Serve. Let the pizza cool for a couple of minutes before slicing and serving. For extra flavor, sprinkle with freshly grated Parmesan or Romano cheese.
