
Arugula Pizza!
INGREDIENTS:
- 1 roll refrigerated pizza dough (or prebaked pizza crust)
- ¾ cup pizza sauce
- 8 ounces fresh mozzarella, shredded or torn into pieces
- 2 cups fresh arugula
- 1 cup cherry tomatoes, halved
- Balsamic glaze, for drizzling
- Extra-virgin olive oil, for brushing
- Freshly grated Parmesan or Romano cheese
INSTRUCTIONS:
- Prepare the oven and dough. Preheat your oven to 425°F. Roll out the pizza dough into a 12-inch circle on a pizza pan or baking sheet.
- Assemble the pizza. Top the dough with the pizza sauce and then with the mozzarella cheese. If desired, drizzle a little olive oil over the base before adding the sauce.
- Bake. Place the pizza in the preheated oven and bake for 11–14 minutes, or until the cheese is bubbly and golden brown.
- Add final toppings. Remove the pizza from the oven and top it with the cherry tomatoes and arugula. Add a drizzle of balsamic glaze over the top.
- Serve. Let the pizza cool for a couple of minutes before slicing and serving. For extra flavor, sprinkle with freshly grated Parmesan or Romano cheese.
