
Roasted Radicchio with Citrus Glaze!
INGREDIENTS:
- 1 medium head radicchio
- 1 Tbsp extra-virgin olive oil
- Salt and freshly ground black pepper
FOR THE GLAZE:
- 2 Tbsp fresh orange juice
- 1 tsp honey or maple syrup
- 1 tsp finely grated orange zest
- ½ tsp fresh lemon juice
- 2 tsp balsamic vinegar
OPTIONAL GARNISHES:
- Toasted nuts (walnuts, pine nuts, or slivered almonds)
- Crumbled goat cheese or feta
- Fresh herbs
INSTRUCTIONS:
- Prepare the oven and radicchio: Preheat the oven to 400°F. Slice the head of radicchio into four wedges, making sure to keep the core intact to prevent the leaves from separating.
- Season and roast: On a small baking sheet, toss the radicchio wedges with olive oil, salt, and pepper. Arrange the wedges cut-side down in a single layer. Roast for 20–25 minutes, or until the edges are slightly charred and the radicchio is tender. Flip them halfway through cooking.
- Make the glaze: While the radicchio is roasting, combine the orange juice, honey (or maple syrup), orange zest, lemon juice, and balsamic vinegar in a small saucepan. Bring to a low simmer over medium-low heat and cook for 3–5 minutes, or until the mixture has reduced to a slightly syrupy consistency.
- Glaze and serve: Remove the roasted radicchio from the oven and arrange the wedges on a plate. Drizzle the warm citrus glaze over the radicchio.
- Garnish: Finish with your preferred toppings, like toasted nuts or crumbled cheese. Enjoy :-)
