Herb Salad with Honey Vinaigrette!

SALAD INGREDIENTS:

  1. 2 cups mixed salad greens
  2. 2 cups arugula
  3. ½ cup fresh parsley, chopped
  4. ¼ cup fresh oregano, chopped
  5. ½ cup crumbled feta cheese

VINAIGRETTE INGREDIENTS:

  1. ¼ cup extra-virgin olive oil
  2. 2 tbsp white wine vinegar
  3. 1 tbsp honey
  4. 1 tsp Dijon mustard
  5. Salt and freshly ground black pepper, to taste

OPTIONAL ADD-INS:

  1. Sliced strawberries or blueberries
  2. Dried cranberries or apricots
  3. Crispy chickpeas
  4. Hard-boiled eggs
  5. Sliced cucumbers
  6. Thinly sliced red onions
  7. Toasted slivered almonds or walnuts
  8. Sunflower or pumpkin seeds

INSTRUCTIONS:

  1. Prepare the greens and herbs: In a large salad bowl, combine the mixed salad greens, arugula, fresh parsley, and fresh oregano. Toss gently to mix.
  2. Make the vinaigrette: In a small bowl or jar with a tight-fitting lid, whisk together the olive oil, white wine vinegar, honey, and Dijon mustard until well-combined. Season with salt and pepper to taste.
  3. Add optional ingredients: If using, toss any desired vegetables, fruits, or proteins with the greens and herbs in the bowl.
  4. Assemble the salad: Just before serving, pour the vinaigrette over the salad. Gently toss to coat all the leaves and add-ins evenly.
  5. Finish and serve: Sprinkle the crumbled feta cheese and any chosen nuts or seeds over the top of the salad. Enjoy :-)
